How to Make Homemade Chocolate Pancakes

I love pancakes, but I also love chocolate. One day I decided there had to be a way to make chocolate pancakes. Sure enough, there is a way, and it’s a very delicious way. Chocolate pancakes are more rich and less fluffy than regular pancakes, but once you learn how to make homemade pancakes that are chocolaty instead of plain, you won’t mind the different. A good chocolate pancake recipe should be easy to follow. Here is my favorite.

Make the Batter

In a bowl, sift together a cup of flour, 1/3 cup of cocoa powder, 1/4 cup sugar, 1 teaspoon baking soda and 1/2 teaspoon salt. Stir it gently but thoroughly with a whisk and set aside. In another bowl, whisk together thoroughly 1 cup of milk, 1 egg, 1/2 teaspoon of vanilla and 2 tablespoons vegetable oil. Stir it until well combined.

Next, pour the wet ingredients over the dry ingredients. Stir gently with a whisk being careful not to throw flour everywhere. Mix is sparingly just until it resembles a batter. Lumps are okay. They are a good sign that you didn’t over-mix the batter. Put the batter in the fridge until you’re ready to use it. Letting it rest will make them fluffier. However, do not stir the batter at all.

Cooking Instructions

Get a griddle hot to 350 degrees, or heat up a pan on the stove to medium high heat if you don’t have an electric griddle. Once it’s thoroughly heated, wipe a small amount of vegetable oil or butter over the pan just to grease it. There shouldn’t be any beaded oil or butter, just a thin coating.

Use a ladle to pour about 1/4 cup of batter onto the pan to form pancakes. Again, don’t stir the batter, just scoop and pour gently. Let it cook until tiny bubbles form across the top. They are chocolate so you won’t be able to tell based on a golden brown color underneath. Flip and cook for another minute on the other side.

Serve the chocolate pancakes with butter and syrup, or dust them with powdered sugar. I like them best served with whipped cream on top.
